Lebanese Lamb Koftas with Yoghurt Sauce

Ingredients

Kofta;

  • 350g lamb mince
  • 1 egg
  • 1 white or brown onion, finely diced
  • 1 clove garlic, crushed
  • 1 tsp tumeric
  • 1/4 tsp chili powder
  • 1 tbsp chopped fresh mint
  • 1/2 tsp cinnamon
  • 1 tsp cumin
  • 1 cup fresh breadcrumbs
  • salt & pepper to taste
  • 4 bamboo skewers

Mint sauce;

  • 2 tbsp chopped mint
  • 1/2 tsp crushed barlic
  • 1 cup natural yoghurt

Method

Soak skewers in water for at least 30 mins

Mix kofta ingredients together by hand or in a food processor

TEST: make a small patty and fry it to taste for seasoning and spicyness; adjust mixture to your preference

Divide mixture into 4 portions

Form each into a sausage shape about 10 cm length

Carefully push skewer up through the middle, refrigerate until needed

Brush with vegetable oil and place on a hot bbq

cook over moderate heat, turning regularly

Centre should reach 75C

Yoghurt sauce;

Chop mint in a food processor, add garlic and yoghurt and blend well

Drizzle mint over cooked koftas just before serving.
