Pancakes

Ingredients

  • 2 cups all-purpose flour, stirred or sifted before measuring
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 egg, slightly beaten
  • 1 1/2 cups milk
  • 2 tablespoons melted butter

Preparation

Sift together flour, baking powder, and salt. In a separate bowl, combine egg and milk; add to flour mixture, stirring only until smooth. Blend in melted butter. Cook on a hot, greased griddle, using about 1/4 cup of batter for each pancake.

Cook until brown on one side and around edge; turn and brown the other side. Recipe for pancakes serves 4.


Oat Pancakes

Cook 15 mins Serves 8

  • 1/2 cup white flour
  • 1 tsp baking powder
  • 2 T sugar
  • 1/4 t salt
  • 3/4 c rolled oats
  • 1 egg
  • 3/4 c soy milk or low-fat dairy milk
  • 2 T margarine, melted
  • extra margarine for cooking
  1. Sift flour, baking powder, sugar & salt into a mixing bowl and mix in rolled oats
  2. Make a well in the centre of dry ingredients
  3. Mix egg, soymilk and margarine, pour into well, combine gently

Place 1/4 c mixture in hot non-stick frypan
