- Tomato-based sauce. Vegetarian, meat, or seafood-based.

- Cream-based sauce. Creamy, rich, white, cheeeeezy sauces, of all varieties.

Fresh pasta is slightly messy, fantastic fun. Especially when you discover it clinging it to the ceiling months later.
Fresh pasta tastes better, cooks faster, and with some practice, is very fun and fast to make.
Impress your friends, your workmates, your Mom, your neighbors, even the homeless guy at the shelter. Fresh pasta is altogether rare in today's society and is one of the Great Losses of the industrial society.

Perhaps the best thing about fresh pasta is the yummy stuff you can mix with it. Just like baking your own bread, plain white will soon become a thing of the past. Mix in basil, chili, salt, pepper, sundried tomato... the options are limitless. And then, instead of the regular olive oil, try infused olive oils for that amazing extra kick.
