Coconut Milk & Cream
I am a big fan of spicy curries, so a few cans of coconut cream are always tucked away in my pantry.
From time to time, I've found myself short on regular milk, and pulled out a can of coconut milk as a trial substitute.
In my experience, this either works awesomely, or horribly, never in-between.
My current results;
- Baking. AWESOME!
- Used coconut milk in place of dairy milk in my blueberry muffin recipe and it was better than I could ever have imagined! It adds only a hint of coconut flavor, not over-much, and the muffins rise just as well with no complications. It also makes the muffins slightly more moist & juicy than dairy milk does.
- Oatmeal. AWESOME!
- Use instead of dairy milk for the initial soaking of your oats. Great flavor and no downsides.
- As a substitute for cream in your coffee.
- NEVER NEVER NEVER do this to your coffee. It is horrible beyond description. I have no idea why... it sure sounded like a good idea.
