Pot Eggs

In a small teflon-coated pot with a lid;

  • Cook some chopped bacon, corned beef hash, or salmon along with mushrooms, onions, or other favorites.
  • Just before the meat is finished cooking, crack and add 3 eggs on top (unscrambled). Be careful not to break the yolk.
  • Cover the pot.
  • Wait about 5 minutes or until egg yolks are cooked to your satisfaction.
