Blueberry Muffins
AllRecipes.com is one of my favorite recipe sources, and this recipe for To Die For Blueberry Muffins is a good example of why.
But anything can be improved upon! For added zest, use the above recipe as a base and add;
To the muffin mix;
- one medium-sized mashed yellow banana (firm but not green) Mash using the tip of a fork.
- about 70gms of broken walnut pieces
- cinnamon, or ground mixed spice. I use Gregg's ground Mixed Spice , which contains coriander, cinnamon, pimento, ginger, cassia, nutmeg, and cloves
- optionally, use coconut milk (or cream) in place of the regular milk
To the topping;
- 1-2 tsp vanilla extract
The banana and coconut cream add flavor and excellent moistness, without making the muffins gooey. The walnut pieces add great flavor and texture.
If you are making large muffins, you may want to add 1-2 minutes to the backing time to ensure the inside is cooked well. I use a dry clean butterknife and poke the muffin; if it comes out ungooey, I know it's done (and I don't add any cooking time).
